Emmanuel Giboulot ha grandi mani ruvide da lavoratore, con le quali stringe forte le tue (all’epoca si stringevano ancora le mani) quando ti accoglie nella sua cantina a Beaune. Niente reception, sala da degustazione o personale per le visite guidate. Lui ti riceve, ti fa scendere in cantina, ti serve e beve con te gli assaggi dei suoi vini (che sono mezzi calici), ed alla fine ti prepara la cassa con i vini da portare via (perché è sicuro ne porterai via almeno una cassa).

Giboulot è noto soprattutto per essere un pioniere della viticoltura biologica e biodinamica in Borgogna (fa anche parte dell’associazione Renaissance des Appellation/Return to Terroir fondata nel 2001 dall’iconico vigneron Nicolas Joly). Anche la sua vinificazione è assolutamente di impronta non interventista, rientrando a pieno nello spettro dell’artigianalità/naturalità. Molti lo conoscono anche a causa delle accuse nel 2014, decadute dopo il ricorso, che gli sono state rivolte per aver rifiutato un ordine del governo di utilizzare pesticidi.

Ho visitato la cantina di questo impressionante uomo e vignaiolo nell’aprile del 2019, durante una viaggio in Borgogna. La foto delle bottiglie per gli assaggi fornisce un minimo esempio della dimensione “spartana”, in presa diretta dell’assaggio. L’ambiente rispecchia a pieno la personalità di Giboulot e del suo lavoro: essenziale, senza sovrastrutture, schietto e diretto. Anche i suoi vini hanno queste caratteristiche, alle quali bisogna aggiungere però una dose irrinunciabile di profonda eleganza.

Les Pierres Blanc 2017 è uno Chardonnay al 100% su terreno vulcanico di argille bianche e viti di 40 anni e fa parte della piccola e piuttosto rara appellazione Côte de Beaune (da non confondere con Côte de Beaune Village). Giallo paglierino chiaro con leggeri riflessi verdolini, al naso è molto sottile e delicato, con netta prevalenza di agrumi (limone e lime su tutti), fiori bianchi ed erbe selvatiche appena accennati. In bocca ha un attacco secco e dritto come pochi, una mineralità infinita (sembra proprio che nel calice ci siano dei sassi bianchi), buona persistenza e profondità. Il sorso continua tesissimo, con una bellissima acidità sferzante e una sapidità persistente (che manterranno vivo questo vino ancora per molto tempo), svuotando il calice in maniera prematura. Ha un corpo forse lievemente esile e non possiede una enorme complessità aromatica; alla cieca potrebbe facilmente essere scambiato con uno Chardonnay che non abbia visto legno. Ma questo è lo stile del Domaine, tutto incentrato sulla verticalità, la croccantezza del frutto, la tensione dinamica del sorso e la digeribilità dei vini.

Apprezzo molto i vini di Giboulot, il suo lavoro, la sua posizione intransigente e partigiana. Senza dubbio questo è il suo vino che preferisco e che a mio avviso maggiormente lo rappresenta. Se amate gli Chardonnay (anche di Borgogna) molto espressivi, potenti, profumatissimi, magari con note burrose e boisè, lasciate a scaffale Les Pierres Blanc (se lo trovate), non fa proprio per voi. Se invece amate e non solamente apprezzate (visto il prezzo non propriamente economico per un lieu-dit) questa tipologia di vini allora è un vino da bere assolutamente.

Emmanuel Giboulot has large, rough worker’s hands, with which he shakes yours tightly (they still shook hands at the time) when he welcomes you into his cellar in Beaune. No reception, tasting room or tour staff. He receives you, takes you down to the cellar, serves you and drinks samples of his wines with you (which are half glasses), and at the end he prepares the case with the wines to take away (because he is sure you will take away at least one earnings).

Giboulot is best known for being a pioneer of organic and biodynamic viticulture in Burgundy (he is also part of the Renaissance des Appellation/Return to Terroir association founded in 2001 by the iconic vigneron Nicolas Joly). Its winemaking is also absolutely non-interventionist, fully falling within the spectrum of craftsmanship/naturalness. Many also know him because of the charges against him in 2014, which were dropped after an appeal, for refusing a government order to use pesticides.

I visited the cellar of this impressive man and winemaker in April 2019, during a trip to Burgundy. The photo of the tasting bottles provides a minimal example of the “spartan” dimension, directly from the tasting. The environment fully reflects the personality of Giboulot and his work: essential, without superstructures, frank and direct. Its wines also have these characteristics, to which we must however add an indispensable dose of profound elegance.

Les Pierres Blanc 2017 is a 100% Chardonnay on volcanic soil of white clay and 40-year-old vines and is part of the small and rather rare appellation Côte de Beaune (not to be confused with Côte de Beaune Village). Light straw yellow with light greenish reflections, the nose is very subtle and delicate, with a clear prevalence of citrus fruits (lemon and lime above all), white flowers and barely noticeable wild herbs. In the mouth it has a dry and straight attack like few others, an infinite minerality (it really seems as if there are white stones in the glass), good persistence and depth. The sip continues very tense, with a beautiful lashing acidity and a persistent flavor (which will keep this wine alive for a long time to come), emptying the glass prematurely. It has a perhaps slightly thin body and does not possess enormous aromatic complexity; in the blind it could easily be mistaken for a Chardonnay that has seen no wood. But this is the style of the Domaine, all focused on verticality, the crunchiness of the fruit, the dynamic tension of the sip and the digestibility of the wines.

I really appreciate Giboulot’s wines, his work, his uncompromising and partisan position. Without a doubt this is my favorite wine of his and which in my opinion best represents him. If you love very expressive, powerful, very fragrant Chardonnays (including Burgundy ones), perhaps with buttery and woody notes, leave Les Pierres Blanc on the shelf (if you can find it), it’s not really for you. If, however, you love and not just appreciate (given the not exactly cheap price for a lieu-dit) this type of wine then it is a wine to absolutely drink.
