Barolo Cannubi 2016 –  Brezza

Per raccontare questo vino possiamo partire dalle tre parole che circoscrivono l’ambito d’indagine in modo piuttosto preciso:

2016, Cannubi e Brezza. Nell’ordine: un’annata largamente considerata tra le migliori delle Langhe recenti; uno dei cru più prestigiosi e conosciuti di Barolo, il cui nome compare già su una bottiglia datata 1752; una delle aziende storiche del territorio, interprete coerente di un’idea tradizionale di Barolo, e il cui Cannubi 2016 è stato considerato dalla critica tra le migliori espressioni dell’annata.

Nebbiolo vinificato in cemento, due anni in botti grandi e affinamento in bottiglia. L’attitudine è classicista.

Desta qualche perplessità all’apertura per una certa ritrosia a sviluppare fragranze, ma già a fine cena comincia ad aprirsi.

Dá il meglio a 24 ore dall’apertura quando sviluppa un ventaglio di fragranze decisamente ampio e rigoroso.

Si va dal lampone al rosmarino, dall’eucalipto all’agrume delicato, con un fondo di goudron — credo sia una delle poche volte che lo avverto così distintamente.

Il sorso è teso, slanciato, pieno di forza nervosa con acidità fluente e tannini nobili nella loro forza. Finale prolungato, arioso, tutto centrato sul frutto rosso. 

Il fatto che dia il meglio a ventiquattro ore dall’apertura suggerisce soprattutto questo: siamo davanti a un Barolo ancora in piena traiettoria evolutiva, capace di distendersi senza perdere tensione e con parecchia aspettativa di vita davanti.

Vino ottimo che può essere accompagnato a questo punto della sua evoluzione con un  carrè d’agnello al forno o con una faraona ai funghi porcini in tegame. No panna e/o pomodoro.

Barolo Cannubi 2016 – Brezza

To tell the story of this wine, we can start with three words that define the scope of the discussion quite precisely: 2016, Cannubi and Brezza.

In that order: a vintage widely regarded as one of the finest in the Langhe in recent decades; one of Barolo’s most prestigious and renowned crus, whose name already appeared on a bottle dated 1752; and one of the historic estates of the area, a consistent interpreter of a traditional idea of Barolo, whose 2016 Cannubi has been considered by critics among the finest expressions of the vintage.

Nebbiolo vinified in concrete, aged for two years in large oak casks and then further refined in bottle. Its attitude is decidedly classicist.

At first it raises a few doubts, showing a certain reluctance to develop its aromas, but by the end of dinner it already begins to open up.

It gives its best, however, twenty-four hours after opening, when it develops a broad and remarkably precise aromatic range. Raspberry, rosemary, eucalyptus and delicate citrus notes emerge over a background of goudron — I believe this is one of the very few times I have perceived it so distinctly.

The palate is taut and slender, charged with nervous energy, with flowing acidity and tannins that are noble in their strength. The finish is long and airy, entirely centred on red fruit.

The fact that it reaches its finest expression after twenty-four hours suggests above all that this is a Barolo still firmly on its evolutionary path, capable of unfolding without losing tension and with plenty of life ahead of it.

At the table, its combination of tension, fine tannins, balsamic notes and red fruit calls for dishes with depth but without excessive richness. A rack of lamb with herbs would work beautifully, but I would be particularly tempted by guinea fowl with mushrooms, slowly cooked in a pan: the succulence of the meat would meet the wine’s acidity and tannins, while the earthy character of the mushrooms would echo its more balsamic and goudron-like nuances without overwhelming the finesse of Cannubi.
